I was recently set a challenge by Provamel to create some winter warming recipes using their range of yoghurts. I’m not going to say I’m the best cook (I’m most definitely not) but I do enjoy cooking things when I get the change. I decided to make Tikka Masala for the first part of the challenge and use the Provamel No Sugar yoghurt.

Ingredients (serves 4)
- 4 chicken breasts cut into chunks
- Juice of 1 lime
- 1 onion diced
- 1 red chilli (with or without seeds)
- 4 garlic cloves (crushed)
- 1tsp Cummin
- 1tsp Cinnamon
- 3cm root ginger (grated)
- 5 tbsp tomato puree
- 200g natural yoghurt (I used Provamel Natural Free From Sugar)
The first step is to create the marinade for the chicken. Combine the yoghurt, lime juice and 2 tbsp of tikka curry powder in a bowl and mix. Add seasoning if desired. Put the chicken into the marinade and place in the refrigerator for 3-4 hours or overnight if you are preparing the meal in advance.
The next step is making the tikka sauce. Heat a small amount of oil in a frying pan and add the chopped onion, fry for around 2-3 minutes. Add the chopped red chilli, ginger, cumin, cinnamon and 2 tbsp of tikka curry powder and fry for around 1-2 minutes. Add 300ml of water and 5 tbsp of tomato puree, bring to the boil then simmer for around 10-15 minutes.
Grill the chicken on a medium heat for around 10-15 minutes, until thoroughly cooked. When the chicken is fully cooked add to the tikka sauce, stir and serve.
I really enjoyed the Tikka Masala and will definitely be making it again in the near future. It was full of flavour and had a good kick to it but it wasn’t too hot, a definite must try if you like curries.
